    I was wondering of that root was ginger, but I see it's J.A.. I've never used it... Enjoy your produce! :-)

  3. Jerusalem artichokes are easy to grow and under ideal conditions can become a bit weedy. We serve them as a condiment, unpeeled, scrubbed, left whole and baked. They can cause stomach upset in some people as they are high in inulin. Eaten in small quantities they seem to cause me no problems. I think they are delicious and worth a try.
